Vin Santo del Chianti Classico

Symbol of Tuscan joviality and hospitality, this wine is obtained mainly from Trebbiano and Malvasia grapes, with a small percentage of Canaiolo rosa and San Colombano.

The grapes are picked at the end of September, after an accurate selection, and they are dried on special framework until the end of Jaunuary. Then the dried grapes are pressed and the juice is put into small kegs made of chestnut tree, with a capacity which varies from 30 to 100 liters. The wine has to age at least for three years. Then a natural decantation follows and after a year the wine is bottled. It has the smell of dried fruit and caramel.

This Vin Santo is the ideal wine to drink with cakes and biscuits.

We also produce another variety of Vin Santo amabile, that we call "passito 6 mesi" because the grapes are dried for six months, from October until April. It is clear that the juice obtained after the drying period will be just a few and thereof very precious. Then it is aged in kegs made of cherry and acacia wood for at least six years. It has the aroma of honey and candied fruit, figs jam, vanilla and honey.

This Vin Santo Riserva can be drunk as a sweet meditative wine or as a sweet wine to drink with spoon cakes as créme brûlée, cheese cake, mousse.
